Rainbow Carrot Muffins | Kitchener/Waterloo Food Photographer

Hello Everyone! Beginning this week I'm going to *try* something new in light of building up my Food portfolio! Every Friday, when the Girls are in school, I'm going to photograph my favourite, five-star recipes. I've gathered quite the bounty of recipe cards over the years, my favourites being those I scribbled out from my Mum's recipe books when I was a teenager, and I'm excited to not only share the recipes but also share the images I capture along the way.

This week's treat: RAINBOW CARROT MUFFINS!

1/2 c. butter (softened)
1 c. white sugar
1 egg (whisked)
2 tsp pure vanilla extract
2 lunch-sized containers of unsweetened applesauce

2 c. flour
1 tsp salt
1 tsp b.soda
1 tsp b. powder
1 tbsp cinnamon (yum)

2+ c. shredded carrots

1+ tbsp plain yogurt (or milk)

1) Pre-heat oven to 350 degrees.
2) Cream together butter and sugar. Add whisked egg and pure vanilla extract.
3) In a separate bowl, mix flour, salt, baking soda, baking powder and cinnamon together. Add to creamed mixture.
4) Add carrots and slowly add yogurt (or milk). Only add enough yogurt to reach a soft and creamy batter.
5) Fill muffin cups with batter and place in oven for 20-25 minutes (depending on how full you fill your muffin cups).
6) Let cool in tray and eat while warm.
