A Wintery Recipe | Carrot Cake

Ingredients:

* 3 cups shredded carrot, about 2 medium-sized carrots
* 4 eggs
* 1 cup greek yogurt
* 1 cup sugar, white
* 1/2 cup sugar, brown + packed
* 2 cups flour
* 2 tsp baking soda
* 2 tsp baking powder
* 2 tsp cinnamon
* 1/4 tsp cloves
* 1/4 tsp nutmeg

Method:

1. Pre-heat oven to 350 degrees + grease your pan of choice (I used a bundt pan - and please remember, different pans yield different amounts of time you have to wait for your loaf to bake in the oven).
2. Mix together eggs and sugars.  Add shredded carrot and greek yogurt.
3. Mix together flour, b. soda, b. powder, and spices.  Add to wet mixture.
4. Once everything is combined, pour batter into pan and place in oven to bake.
5. Bake for about 40-45 minutes, or until toothpick inserted comes out clean.

Who else has been having a fun little Family Day today?  It's been nice to take a break from editing and spend some time with the girls this afternoon :)).  The Princess Twin was holding a showing for a special French movie, which we took in while Dad did physics-y stuff and drank coffee across the street.

Our movie was promptly followed by a fun bubble photo session in the home studio!  Annie was at a birthday sleepover on the weekend and came home with the best bubbles ever in her treat bag!!  Not sure where they were picked up, but they were too pretty to not photograph (which is exactly what I think of my girls too ;)).  I'm posting a few quick images from this afternoon and then it's upstairs to play world of warcraft with two little draenei.
